Heirloom vegetables, ancient seeds, grains, maize, and legumes only exist because farmers and gardeners have continued to cultivate and grow them. They don’t necessarily work for a global, commercial scale. They weren’t meant to, but preservation of these ancient seeds and grains, and of course eating the results, are central to long term longevity of thousands of spectacular culinary delights.
